Totally Amazing Pasta Sauce

My Neighor Steve's Chicken Cacciatore
Braise chicken in a frying pan, cover with My Neighbor Steve's sauce, and simmer until chicken is done (about 45 minutes).


Tomato & Basil Poached Fish
Place fish in a skillet, cover with My Neighbor Steve's sauce, and simmer until fish is flakey.
Annie France's Broken Noodles with Squash for Two
I often cook more pasta than I need and actually store it in the fridge for a short while, or I take the bits and pieces of dry pasta and break them up into a saucier mix to avoid boiling (and wasting) water. This recipe works either way…but if you use precooked noodles, eliminate the extra water.
 

1 yellow squash, washed and sliced
1 large Portobello mushroom, diced
½ yellow onion, diced
2 T minced garlic
½ cup olives (I use whatever I have on hand but prefer green varieties)
2 links of chicken sausage (I like Amy’s) sliced
1 jar of My Neighbor Steve’s Tomato Basil sauce
4 oz broken noodles (fettuccini, spaghetti, whole wheat or plain)
4 slices of provolone cheese, diced
 

Sauté squash, onion and mushroom. Lightly season with salt. Add olives, sausage. Sauté for about 5 minutes more. 
Add the entire contents of the sauce, rinse the jar with water about ¼ full and add to pan. Add broken noodles. Simmer until noodles are Al dente or cooked to your liking. Remove from heat. Stir in diced cheese and serve with fresh basil.

Treva Jones from Warsaw, Missouri, uses My Neighbor Steve's sauce to give her signature soup a special twist. "Using the sauce as a base added a wonderful spark to my cabbage, onion, and carrot soup. I also added spicy turkey sausage and the onions cooked with the turkey. I simmered it for a few hours with poultry seasoning, a bay leaf, sea salt, and white pepper. It was a hit at our house," she said. "I also cooked turkey sausage and sweet onions in the sauce and poured it over Thai rice noodles."


Eggplant Parmigiana
Tanya, who attended the Texas Culinary Academy, in Austin, says, "I think it would be outstanding over chicken or eggplant parmigiana. It would also make a stunning ratatouille and be very nice tossed with couscous. It would also be perfect for baked pasta dishes if you prefer (like I do) not to precook your pasta.
